A Summer Recipe with Woldy Kusina

Here, Woldy shares with us his fresh, fulfilling, Coconut Herb Rice.
Coconut Herb Rice
Servings: 4 servings

Cook time: 1 hour
INGREDIENTS
2 cups basmati rice, soaked in water for 30 minutes and rinsed
1 1⁄2 teaspoons kosher salt
3 cups coconut water
1⁄2 cup unsalted roasted cashews, roughly chopped
1⁄2 cup golden raisins
1⁄4 cup parsley, chopped
1⁄4 cup cilantro, chopped
1⁄4 cup basil, chiffonade
2 limes
2 teaspoons lime zest
Crispy shallots, store bought
METHOD
In a saucepan, add rice, kosher salt and coconut water. Mix and bring to a boil. Cover with a lid and and simmer on low heat for 15-20 minutes until the liquid is absorbed and the rice is tender.
Turn the heat off and let the rice sit and cover for 10 minutes. Fluff the rice with a fork and add in cashews, golden raisins, parsley, cilantro, basil and lime zest. Mix until well combined. Juice 2 limes over the rice. Season with salt and pepper and mix until combined. Garnish with crispy shallots.
Serve at room temperature and enjoy!
